Vegetarian eggplant parm. isn’t as borning as it sounds. It’s actually quite delicious. You can make it with any kind of sauce (we make our own). Our sauce is just peppers, onion, garlic, and tomato sauce. With spices course.
Slice your eggplant thin and use any kind of breading you like. We like panko and we dip in water then the panko. No milk or egg for me. Bake at 400 until golden brown. About 25/30 minutes.

You can have this with noodles, but I use asparagus. Cause I’m cool like that.
