Sometimes a girl just wants a burger. But, if she doesn’t eat meat, she needs to be creative. Here is my recipe for blackbean and quinoa burgers. These protein packed superfood burgers will knock your socks off.
You will need:
Quinoa 1/2 cup dry
Blackbeans 1 can
Onion
Garlic
Olive oil
Veggie broth (or water) 1/4 cup
Start cooking your quinoa and chop your onions and garlic. Heat up your oil and then toss in the onions and garlic.
I added some veggie broth to help them cook. Season with salt and pepper. Once cooked add the blackbeans and mix.
In a food processor (we used our Nutribullet) add the bean mixture and half of the cooked quinoa. Pulse until you get a nice consistency. About 5 or 6 times. Scoop this into a bowl and the rest of your quinoa. Taste it and see if you want to add something else.
Form into patties (I made 5) and bake in the oven at 350 for 20 minutes. Flip with spatula and bake 10 minutes more.
When they are crispy on top they’re done.
Dress them up any way you like. I used veggie mozzarella, lettuce, tomato, and Tyrell and I made fresh guacamole. We also made a cucumber salad for a side.Such a good meal that you can feel good about pigging out on!
