Chia seeds. I love putting them in my Shakeology shakes. They are so good for you. You can pretty much sneak them in anywhere…and you should!
I tried something new today. I made some chia seed pudding. I have never tried this, but I wanted to say I did…
1/4 cup Chia seeds
1 Almond milk
2 TBL PB2
Mix PB2 and milk together until blended well. Add seeds. Mix. Let sit in fridge until seeds are ready.
Hmmm. Now let me tell you about a stupid little fear I have. I have a fear of little tiny things in a group. Sounds so stupid when I type it. But, it’s true. When I make rice, beans, quinoa, etc. I can’t look at it for very long (when it’s uncooked) or else it creeps me out. Yes, I’m a freak. So, I think making this pudding put me out of my comfort zone! Such a big day for me!
Pudding’s ready! Kind of scared.
I told myself, “Just eat it. Don’t look at it.” My first thought was, very tasty. I had a few more bites. I was watching Peppa Pig with Maddox so I never looked down until I was half way through the bowl. Well, that did it. Now don’t get me wrong, this is a very tasty little treat and I don’t want you to be scared to try new, healthy things, but I need to be blind folded! (I think I will stick to sneaking it into Shakeology.) So I set it down on the coffee table in front of me. I could still see it so I put it on the floor. I have to remember to pick it up before my husband comes home or else he’ll wonder what the heck I’m up to now…
